Ancel Benjamin Keys was an American physiologist who studied the influence of diet on health. From 1958-1964, he hypothesized that dietary saturated fat causes cardiovascular heart disease and should be avoided based off of his seven-country study. But in fact, he studied 22 countries and threw out data from 15 other studies that didn't coincide with his theory.

In 2014 another study was conducted in over 18 countries with 600,000 participants. Results confirmed that saturated fat was not associated with cardiovascular disease, coronary heart disease, stroke, or type 2 diabetes.

Why is the out-dated science still shedding light in today's health care system? Well, healthy people don't make big corporations and pharmaceutical companies money. Managing symptoms is the primary goal when the focus should be on treating the cause.

Which fats should we be avoiding? Mainly trans fat and refined oils.

The most common offenders are:

Corn Oil - Goes through an insane amount of processing with chemical solvents, steamers, neutralizers, de-waxers, bleach, and deodorizers before it ends up in the bottle.

Cottonseed Oil - During extraction, the cottonseeds are subjected to intensive chemical refining with toxic hexane, bleach, and deodorizers.

Soybean Oil - During extraction, the soybeans are typically subjected to intensive chemical refining with toxic hexane, bleach, and deodorizers.

Partially Hydrogenated Trans Fat - The CDC has linked it to at least 20,000 heart attacks per year, and the Institute of Medicine says trans fats have "no known health benefit" and there is no safe level to eat.

The human brain is nearly 60 percent fat. We've learned in recent years that fatty acids are among the most crucial molecules that determine your brain's integrity and its ability to perform at it's best. Fat is also good for your hair, skin, and nails. Do you experience brain-fog or dry skin? You may not be including enough fats into your diet.

It's essential to add a variety of quality saturated, polyunsaturated, and monounsaturated fats into your diet, these include:

Grass-fed beef, pastured eggs, coconut oil, grass-fed butter or ghee, olive oil, olives, avocado, avocado oil, salmon, sardines, nuts, and seeds.
