I always make an attempt to be adventurous and try new vegetables. This way I don’t get bored and stuck eating the same ones all of the time. Every vegetable contains different health benefits and micronutrients.

Endive is my favorite one right now. It’s a perfect crunchy topper to any salad or mixed with cucumbers and tomatoes.

It’s a cheap vegetable that is packed with vitamins and minerals such as folate, and vitamins such as B, A, E, K and C. Not to mention it contains a decent amount of potassium, magnesium and fiber.
